How "secure" are these ? Can you put them on usb ? Do they run with tails/linux ? Just curious..Maybe someone has a better way than what I've been trying to come up with.
It can be extremely safe if you use the Off-The-Record protocol (don't confuse with GChat off the record, that is rubbish). You need to use a local client for it (you can use Pidgin in Windows/Linux or Adium in Mac).
It seems like theres no "easy" way to setup Jabber ... any good ways to do this and still stay secure? Also does anyone want to start a PGP thread for practice?

Download pidgin or any XMPP-capable chat client (really any client will do). Register with any XMPP server you like https://list.jabber.at/ (any server will do, registration will work from inside pidgin). Install pidgin-otr (or any OTR plugin for your favourite messanger) and follow the GUI instructions to generate keys. There is really nothing you need to worry about. It's so easy.
Edit. Screenshots-How-To:
1. Install Pidgin and OTR plugin
2. Run Pidgin
3. Find a suiting jabber server on the web... Click the ADD button in Pidgin Accounts management
4. Create an account with the server (note the checkbox at the bottom)
5. Registration done, your account is set up with your messanger
6. Go to Tools and Plugins and enable OTR plugin.
7. Open OTR Settings, enable all checkboxes and generate a private key
8. Wait ...
9. Done!!!111 >Profit!!!
Now add me [email protected] and start having private, end-to-end-encrypted, off-the-records conversations. Isnt that easy? 10 Minutes max!
