Sort of. Escrow would be the funds used in the transaction are locked up by a third party until the transaction is complete. Bisq's collateral requirements mean locking up different funds.

Sorry, it's been a while since I used bisq and I'm not quite sure what you mean. But I agree with you, the user experience is an issue. I'm just not convinced bisq could handle the kind of liquidity we would want. I mean, I think it all goes over tor which automatically puts significant limits on the number of transactions. I think from a technical point of view, if we consider liquidity more important than privacy, then bisq is not the way.
 
Remember that liquidity is more important that privacy on a certain level, because who cares how privately you can buy nothing?
