Change Masternode Payment Address

I seem to recall reading a post about being able to change the payout address for the masternode. Like the payment going to an address different than the one holding the 1k Dash.

Does anyone know where this post is? I just spent an hour searching for it, no luck.

Weird, my Dash.cong file includes masternode=1, etc. which seems to be outdated. But I've been getting regualr payments.
 
Also, is there a reason as to why setting up a whole new wallet is recommended as opposed to just creating a new address for each new MN in your existing wallet?

Sorry if I missed something, I've been staring at the guide and I think I got most of it but I'm unclear on those two points.
