Bitcoin Lightning Network Still Faces Scaling Issues

Eric Voorhees recently attempted to scale the Bitcoin Pizza historical event by ordering two Bitcoin pizzas on the Lightning Network, the network’s scaling solution, only to be met with transaction limitations.

Not only this, they've also created something called Lightning Loop (In, Out, and Splice). Essentially it's an auto top-up and empty scheme. It seems to me, they are adding solutions to problems they created! If LN is such an elegant solution, why does it need all these extra moving parts? Perhaps that could be the basis of another article, showing all the moving parts (Watchtowers and so on).
